No egg on your face!
A few weeks ago someone told me about (or I read about…but I’ve slept since then so can’t quite remember!) the British Lion Egg website as a good place to find cheap and cheerful egg recipes. Today whilst Kian was having his lunchtime nap, (by the way dreading the day he no longer needs this), I FINALLY got round to having a look at it and loved it! There are absolutely loads of tasty eggy recipes that any hectic mum could whip up in an instant especially if you’re struggling to get your little one to eat eggs straight up, the site goes far beyond my own egg related meals of omelette/scrambled eggs/boiled eggs/egg mayo sandwiches.
A quick browse found basics, like scrambled eggs with watercress, and the altogether more exciting, like spinach and squash fritatta.
A lot of the recipes tell you the calorie content too (I’d rather not know sometimes!) and the cost per person – the cheaper the better is the hectic mum motto at the moment!
I’ve decided to start small and go for their tip of using pitta bread as a dip for egg mayo and cress for mine and Kian’s lunch tomorrow, will let you know how we get on.
