Recipe of the week…Chicken fajitas!!
One meal which is guaranteed to go down a treat in our household is chicken fajitas. I don’t think I know a single person who doesn’t like them, especially me because I don’t have to cook anything (well only the chicken!).
I was going to write down a long recipe of how to marinade the chicken in a home cooked sauce and leave over night blah blah but I thought it would be much easier to just buy a packet of Old El Paso– every parent’s best friend!

Old El Paso Crispy Chicken
Old El Paso Crispy Chicken Fajitas
Serves: Approx 4
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients
- 1 x Old El Paso Oven Baked Crispy Chicken Fajitas Dinner Kit
(Kit contains: 1 x pack of 8 Old El Paso Soft Flour Tortillas, 1 x Old El Paso Crispy Crumb Seasoning Mix, 1 x Old El Paso Mild Original Salsa, 1x Old El Paso Shaker Bag)
- 500g chicken breast
- 1 x Lettuce
- Tomatoes, chopped
- Sour cream to serve
- Vegetable Oil
Method
1. Pre-heat oven to 225°C and slice the chicken into thin strips
2. Get your Old El Paso Shaker Bag ready and chuck in the chicken, 2 tablespoons of vegetable oil and the Old El Paso Crispy Crumb Seasoning Mix.
3. Give it a good shake until the strips of chicken are nicely coated
4. Spread the strips of coated chicken evenly on a baking tray and put it in the oven.
5. Bake for 18 minutes or until chicken is cooked through and crispy.
6. To warm the Old El Paso Soft Flour Tortillas pierce the packaging and microwave on full power for 35-40 seconds
7. Serve with the lettuce, tomatoes, salsa and sour cream, enjoy!
Hectic Mum top tip: If you feel like being a bit greedier then try adding some guacamole to your fajita, yum!
