Recipe of the week - roast potato gnocchi
I don’t know about you but I always try to do my bit for the environment - put the recycling in the right bin, take my own bags to the supermarket and generally try not to waste anything. So I was quite horrified, yet somewhat unsurprised, that a third of all food bought in the UK is ending up in the bin! I spotted an article in The Daily Mail about Recycle for London’s attempt to get people reusing their leftovers by giving them recipes from well known chefs, so I thought this week I’d try one of them. Here we go!

Hugh Fearnley Whittingstall’s Roast potato gnocchi
Serves:6
Ingredients
- About 400g cold, leftover roast potatoes
- One egg
- A good pinch of salt
- 200g finely gated hard goat’s cheese or parmesan
- One tbsp chopped tyme
- 100g plain flour
Method
1) Chop potatoes finely, including all the crispy bits, and place in mixing bowl.
2) Crack in egg and add salt. Mix well with a fork.
3) Add grated cheese thyme.
4) Work in plain flour to bind the mixture.
5) Take teaspoons of mixture, shape in gnocchi (thumb shapes) and lay on floured tray.
6) Bring large pan of slightly salted water to the boil.Drop in small batches of gnocci and simmer until they float.
7) Remove, drain briefly and move to hot plate. Serve immediately.
Hectic Mum top tip: For an easy dinner just serve with Ragu or for something a little more interesting try combining with spinach and ricotta, artichokes and walnuts or really any vegetable of your choice.
