Healthy packed school lunches

So after a couple of months racking your brain about how to entertain the kids every day, they’re finally back to school. School uniform check! Sports kit check! Stationary check! Healthy packed lunches…hmm not yet got that sorted?

With fresh news of Jamie Oliver getting out there to the schools once again and banning butter on sandwiches, I think we’re all realising how important it is for kids to get the right nutrients on a daily basis, without all the junk food. Another factor is that the food needs to keep them full throughout the day – a hungry child is a grumpy one!!

Recipe of the week - Nicoise salad

Now I’m not a big fan of salads - usually they’re a bit too boring for me and I struggle forcing all the lettuce down. That being said I do enjoy a good Nicoise. I think that’s because there’s so much in it that it doesn’t feel like it’s a salad! I pretty much go with the flow when I create it but I thought I’d better look up a proper recipe. The one I found at Calorie King even has a healthy alternative that’s well worth a look.

Recipe of the week - roast potato gnocchi

I don’t know about you but I always try to do my bit for the environment - put the recycling in the right bin, take my own bags to the supermarket and generally try not to waste anything. So I was quite horrified, yet somewhat unsurprised, that a third of all food bought in the UK is ending up in the bin! I spotted an article in The Daily Mail about Recycle for London’s attempt to get people reusing their leftovers by giving them recipes from well known chefs, so I thought this week I’d try one of them. Here we go!
